Definitely look into Next DNS. There are also some Safari extensions that can block ads.
I also suggest buying refurbished unlocked phones in the future instead of going for the carrier freebies which you can see are scams designed to lock you into paying for their overpriced service each month for over a year.

15 year old kids are probably capable of cashier work so long as they aren’t overworked and it doesn’t get in the way of school. It is not particularly dangerous like certain factory jobs could be, and is legal in most cases if the child has a parent’s permission.
The child in the photo does not look like he is 15 years old though, probably closer to 10-11 which generally is too young to be working.

Their CEO is anti-vax and homophobic. Brave Browser (not search) has had some controversy around including crypto, replacing ads with their own, and having had inserted affiliate links into the URL bar in the past.

There is telemetry that can be turned off.
iPhone has the better reputation for privacy/security, however it is proprietary software and so no one can really tell for sure what kind of data that Apple might collect on you.
I’ve given up on it. While I think it was silly to remove, I’ve come to find it just as silly to be so attached to a cable. Bluetooth and USBC headphones have worked just fine for me.
