FWIW in Matrix, one server will still host all your data (username, contact info, credentials, at least one copy of every message you send. That’d be your home server.
Your home server shares a slice of some of your data with other servers and users, and at that point you transfer a copy of that data to them and it becomes technically harder to delete on either server, and you also transfer ownership of your content to the other users regardless of host (, “copy”).
You’re free and welcome to use encryption very frequently. Matrix also keeps a list of everyone who has read each and every message.
Such is life being on the internet, really.
You couldn’t stop it even on IRC. At least here you can host your own Matrix instance.
