It’s world egg day, which means you are required to eat eggs today. This is what I made!
INGREDIENTS
- 3 eggs
- 5 cremini mushroons, sliced
- 1 yellow onion, chopped
- 1 red bell pepper, julienned
- A few sun dried tomatoes
- Parmesan cheese, finely grated
- Basil pesto
- Italian spices & herbs mix
- Hot pepper flakes
- Olive oil
PREPARATION
- Heat up your cast iron pan on a medium-high stove
- Get your oil in
- Get your mushrooms and onion in, cook with occasional stirring until onions become translucent
- Get your red pepper and tomatoes in
- Cook and stir until red peppers get slightly browned
- Beat your eggs, get them in the pan. Tilt the pan around to distribute the eggs evenly
- Get the Parmesan, a few dollops of pesto, and the herbs&spices on there
- Cook until the eggs reach your desired level of cooked.
- Enjoy eggs on egg day
