Of course they phone it in. Those places are not worth your money and just trying to cash in on the “diploma” ==“job ticket” mentality.
Find a place that actually gives a shit about education and you should find professors interested in actual education that will see your attitude as refreshing.

Yeah, I bind mount the config inside a config directory just below the compose file, and the state (databases, files, etc) to a seperate storage location that makes sense. The compose and config gets added to git and pushed to a forge, while the storage directories are backed up like normal (in my case, zfs snapshots pushed to another computer and then restic backs up those cold files to b2. The volumes are ephemeral.

“Most of the market” includes the segments of commercial support contracts for office laptops which Framework doesn’t even target. Then you have the next biggest which is "go to Costco/Walmary/bestbuy and get what is on sale. So Framework simply cannot be a majority brand without those.

That is true, and so I suspect the only truly FLOSS models we will ever see will be highly specialised to a particular task; which is, in the long run, fine by me. A coding llm that comes with a huge corpus of open source training code, maybe even just in a specific language, a speech to text model with a corpus of transcribed creative commons audio, probably a single language or pair of languages if its for translation, etc. That way the datasets, while still huge, could actually be curated by a single community.
